How It All Started
Born from a love of place
Agnes Water Distillery didn’t begin with a business plan. It began with a feeling — that particular combination of salt air, eucalyptus, and warm Queensland light that hits you the moment you crest the hill on Round Hill Road and the Coral Sea opens up in front of you.
We’d been coming to Agnes Water for years before we decided to stay. A long weekend turned into a week. A week turned into a summer. And one summer, we looked around at the lemon myrtle growing in the scrub, the macadamia farms along the hinterland, the sugarcane fields rolling inland, and asked ourselves: why has nobody bottled this place?
The answer, we decided, was that nobody had yet tried hard enough.

These aren’t words on a wall. They’re the decisions we make every day — about ingredients, suppliers, processes, and people.
Provenance Above All
Every ingredient is traceable to its source. If we can’t tell you exactly where it came from and who grew, caught, or foraged it — it doesn’t go in the still. Full stop. Queensland-grown or Queensland-wild, every time.
Craft Over Volume
We will never sacrifice quality for scale. Our batches stay small because that’s when we can taste every decision. If demand outgrows what we can make properly, we’ll manage demand — not cut corners. There are already enough spirits in the world made fast and cheap.
Community as Partnership
Agnes Water and the Town of 1770 gave us everything. We buy local, hire local, promote local, and put money back into this community in ways that go beyond the transaction. A distillery that doesn’t strengthen its town has the wrong relationship with the place it claims to represent.
Country First
We operate on Gureng Gureng Country, and we take that responsibility seriously. We seek guidance from Elders, we source ethically, we forage only within sustainable limits, and we ensure our business contributes to, rather than extracts from, the culture and ecology of this place.
Environmental Honesty
Distilling is energy-intensive. We don’t pretend otherwise. Instead, we measure our footprint honestly, offset what we can, reduce what we can’t, and publish our environmental report annually so our community can hold us to account.
Slow, Patient Excellence
The best things that come out of this coast take time — a coral cay forms over centuries, a mangrove forest over decades, a good fish over a lifetime. We apply the same patience to our spirits. Nothing leaves the still house before it’s ready. We’d rather disappoint with scarcity than impress with mediocrity.
