Agnes Water RUM

Queensland has been growing sugarcane since the 1860s, and the rich volcanic red soil of the Bundaberg and Gladstone regions produces some of the finest cane in the southern hemisphere. Our rum starts there — with fresh-pressed juice from hand-selected local varieties, never molasses — bringing you a spirit that is grassy, vibrant, and unmistakeably tropical in a way that no imported rum can replicate.

Inspired by the French agricole tradition but rooted entirely in Queensland character, our rum range runs from light and elegant through to rich and barrel-aged. Each expression is a different conversation with the same cane fields — the same paddocks, the same salt-tinged sea breeze rolling in from the Coral Sea, the same red dirt underfoot.

spiced rum

If our classic rum is a portrait of the cane fields, our spiced rum is a portrait of the whole coast. We take the same fresh Queensland sugarcane base and infuse it with a carefully calibrated blend of native Australian botanicals — lemon myrtle from the coastal hinterland, native pepperberry from the ranges, finger lime zest foraged from Deepwater National Park, and a supporting cast of warm spices chosen to complement rather than compete with the tropical base.

The result is a spiced rum that is unrecognisably different from the mass-produced, over-sweetened varieties on supermarket shelves. Ours is genuinely complex — aromatic and warm in the way a late Queensland afternoon is warm — with a dry spice finish that comes from real botanicals, not artificial flavouring. Made for long, unhurried drinks on the verandah as the sun drops behind the cane.
